Yeast: Mangrove Jacks M42 New World Strong
Mash at 65oC for 60 minutes then mash out. Boil for 120 minutes. Add the DME 10 minutes from the end of the boil.
Hold fermentation at 19oC until primary is finished and diacetyl is not present, then crash chill and bottle to 2.4 vols CO2.
